Instructions
Making the dough for the rolls
In the bowl of your mixer, add the warm water, oil, sugar, honey and yeast. Whisk together to incorporate, then let rest for 10 minutes until the yeast has bloomed (looks puffy).
1 1/4 cups warm water, 1/3 cup olive oil, 1/4 cup raw cane sugar, 1/3 cup raw honey, 2 tbsp active dry yeast
Next, add 3.5 cups of the flour, the salt and egg. With the dough hook attachment, mix until well combined.
1 tsp sea salt, 1 egg, 4 cups unbleached flour
With your mixer on medium speed, slowly add the remaining half cup of flour. Let the mixer continue on medium speed for the next 10 minutes.*The dough will be sticky but should come together. If not, turn the speed of your mixer up a bit and let it run for another 2-3 minutes, until the dough is no longer sticking to the sides of the bowl.
Generously grease your baking dish and set aside.
Once the dough is ready, flour your work surface and turn the dough out onto it. Roll/gently shape the dough into a large ball. Cut the dough into 8 or 12 pieces. Then shape those dough pieces into balls by folding the dough in on itself a few times. Next, gently spin them on the counter in a counter-clockwise motion to shape them each into a ball.
Place the dough balls into your baking dish and let them rest for 10-20 minutes while your oven is preheating. Then, bake for 10-20 minutes (depending on their size) in a 400-degree F oven.
For the topping
While the rolls are baking in the oven, go ahead and melt the butter in a stove pot or your microwave.
2 tbsp unsalted butter
Add the honey and a pinch of salt. Mix well and set aside.
2 tbsp honey, pinch of salt
Finishing the rolls
Once the rolls are finished baking, take them out of the oven and using a basting brush, brush the butter and honey mixture over top. Making sure to coat them well.
Serve hot and try not to eat them all!
Notes
As stated above, you can substitute the type of oil, sugar, honey, salt and flour in this recipe and the rolls will turn out just fine. The smaller you make the rolls, the faster they will cook so just keep that in mind when baking them.Make ahead and freeze: If you wanted to make these rolls ahead of time, you can! After shaping them into rolls, place them into the freezer on a baking sheet (not touching) for 30 minutes. Then wrap them individually and put back into the freezer. When you're ready to bake them, just place them onto a greased baking dish or casserole dish and bake at 400 degrees for 25-30 minutes. Or until the tops are golden brown. Then just brush them with the honey butter and serve warm!to store: keep the rolls in an air tight container and store at room temperature for up to 3 days.
